About POT
POT is a fine-dining restaurant dedicated to the aesthetic of want.
Our kitchen translates the cuisine of constraint into courses worthy of a tasting menu,
so that guests of means may sample deprivation without the inconvenience of living it.
Every plate is an exercise in controlled austerity. We source what the aisle provides,
elevate what the pantry forbids, and price accordingly. Authenticity is not optional;
comfort is.
